Story

Winter melon has a mild, slightly sweet flavor similar to cucumber but with a denser texture. When simmered in curry, it soaks up all those warm spices while holding its shape beautifully. This quick dish is perfect for busy evenings when you want something comforting without spending hours in the kitchen.

Ingredients

winter melon 500g (about 1 lb)
curry blocks or curry powder 2-3 blocks or 2 tablespoons
vegetable oil 2 tablespoons
water ½ cup
salt to taste
green onions optional, for garnish

Prepare the melon

Slice the winter melon in half, then cut into bite-sized cubes. If the skin is thin and tender, you can leave it on; otherwise, peel it off. Rinse the cubes briefly and drain well.

Sauté the melon

Heat oil in a large pan or wok over medium-high heat. Add the melon cubes and stir-fry for 2-3 minutes until they turn golden and slightly translucent around the edges.

Simmer in curry

Pour in the water and add the curry blocks (or sprinkle in the curry powder). Stir until the curry dissolves and coats all the melon pieces. Lower the heat to medium-low, cover, and let simmer for 8-10 minutes until the melon is tender and the sauce has thickened.

Season and serve

Taste and add salt as needed. The sauce should be fragrant and lightly thickened, clinging to the melon. Sprinkle with chopped green onions if desired. Serve hot as a side or over steamed rice.
