Winter melon has a mild, slightly sweet flavor similar to cucumber but with a denser texture. When simmered in curry, it soaks up all those warm spices while holding its shape beautifully. This quick dish is perfect for busy evenings when you want something comforting without spending hours in the kitchen.
Slice the winter melon in half, then cut into bite-sized cubes. If the skin is thin and tender, you can leave it on; otherwise, peel it off. Rinse the cubes briefly and drain well.
Heat oil in a large pan or wok over medium-high heat. Add the melon cubes and stir-fry for 2-3 minutes until they turn golden and slightly translucent around the edges.
Pour in the water and add the curry blocks (or sprinkle in the curry powder). Stir until the curry dissolves and coats all the melon pieces. Lower the heat to medium-low, cover, and let simmer for 8-10 minutes until the melon is tender and the sauce has thickened.
