Quick Microwave Meat with Zesty Aromatic Sauce

Story

This clever approach skips the stovetop entirely. The microwave does the heavy lifting while you build bold flavor through the marinade and sauce. The result? Tender, juicy meat with a complex flavor profile that tastes like it took far longer to make.

Ingredients

thinly sliced pork or chicken 400g
salt ½ teaspoon
cornstarch 1 tablespoon
fennel seeds 1 teaspoon
garlic, minced 2 cloves
dried chili flakes 1 teaspoon
vegetable oil 2 tablespoons
sugar 1 teaspoon
oyster sauce 1 tablespoon
soy sauce 1 tablespoon
lime juice 1 tablespoon
lime zest 1 teaspoon
water ¼ cup
Sichuan peppercorns 5-6
cooking wine 1 tablespoon
fresh cilantro, for garnish to taste

Instructions

1

Coat the meat

Toss the sliced meat with salt and cornstarch until every piece is lightly dusted. Set aside while you gather the rest of your ingredients—the cornstarch helps lock in moisture and gives the sauce a lovely silky texture.

2

Bloom the aromatics

Put the fennel seeds, minced garlic, and chili flakes in a heat-safe bowl. Pour the vegetable oil over them while it's still hot (you can microwave it for 30 seconds first). The heat will release all those fragrant oils and make your kitchen smell incredible.

3

Mix the sauce

Add the sugar, oyster sauce, soy sauce, lime juice, lime zest, and water to the bowl. Whisk until the sugar dissolves and everything is nicely combined. Set this aside—it'll be your flavor booster.

4

Prep for microwaving

Spread the marinated meat in a single layer in a microwave-safe dish. Scatter the Sichuan peppercorns over the top, then splash with cooking wine. Pour the boiling water over everything, then cover the dish tightly with a lid or plate.

5

Cook through

Microwave on high for 6 minutes. The meat should be cooked through and tender. If you're using thicker cuts, you might need an extra minute or two.

6

Finish and serve

Carefully remove the dish (it'll be hot!). Drain any excess liquid, then transfer the meat to a serving platter. Spoon that gorgeous sauce all over the top, finish with a generous handful of fresh cilantro, and serve right away while it's hot.
